1 tbsn honey
2 tbsn fresh lime juice
1/2 cup plain yogurt
1 cantaloupe, cut into small cubes
1 large cucumber, peeled and chopped
2 tspn chopped fresh mint
1/3 cup chopped roasted pistachios
Salt
In a large serving bowl, whisk together the honey and lime juice until bleneded.
Add yogurt and whisk it in. Add the cantaloupe, cucumber and mint. Toss to combine.
Sprinkle with pistachios, salt to taste.
