Creamy Green Bean & Mushroom Soup

2 1/2 cups finely chopped onion

5 tbsn butter

1 lb mushrooms diced

1/3 cup flour

1 tspn paprika

6 cups vegetable stock

1 lb fresh green beans, cut into 1" pieces

1 1/4 cup heavy cream

Salt and pepper to taste


  1. Prepare soup in large stockpot, sauté the onion and butter for about 10 minutes. Add the mushrooms, flour and paprika and stir until the butter is absorbed,

  2. Add vegetable stock and green beans bring to simmer. Simmer about 10 minutes or until green beans are tender.

  3. Add the heavy cream salt and pepper. Heat through.

  4. Can top with French's Fried Onions if you prefer.
