Blanching is a great way to prepare produce for further preservation. If you have "too much" this is a great way to keep from wasting amazing summer produce and making sure that you have all this goodness into the winter.

Blanching Produce
Start with taking a large pot of water and setting it to boil. Also prepare an ice bath, which will be a large pot of cold water with ice. Once the pot has a good rolling boiling you are set to add your produce. Take your produce and gently place it in the pot for 2-5 minutes (depending on thickness and tenderness preferred). Remove the produce using a strainer or long handled slotted spoon and immediately plunge the hot produce into the ice bath. When the veggies are completely cool remove from the ice bath and dry for further processing.
Now you are ready to freeze, dehydrate or can your extra goodness for the winter months ahead!
