Pumpkin Pie w/ Spiced Walnut Streusel

Streusel

1/3 cup all purpose flour

1/4 packed brown sugar

1 tbsn crystallized ginger

1 tspn ground cinnamon

1/4 tspn ground nutmeg

2 tbsn chilled unsalted butter, cut into cubes

1/3 cups walnuts, chopped


Pumpkin Filling

15 oz cooked pumpkin

1 cup white sugar

1/2 cup brown sugar

3 large eggs

1 stick unsalted butter, melted

1 tspn vanilla extract


  1. Either purchase or make pie crust. Refrigerate 1 hour.

  2. Preheat oven to 375 degrees.

  3. For Streusel, mix flour, sugar, ginger, cinnamon and nutmeg into medium bowl. Add butter and walnuts. Mix until a rough mixture is made.

  4. For pumpkin filling, whisk pumpkin, brown and white sugars together, whisk in eggs one at a time. Whisk in melted butter and vanilla.

  5. To complete pie, pour filling into crust pour streusel over filling, bake about 45 minutes. Cool at least 2 hours at room temp.
