1 cup bran cereal
3/4 cup skim milk
2 cups grated zucchini (or summer squash)
1/2 cup wheat flour
1/2 cup all-purpose flour
1 tspn baking powder
1 tspn baking soda
1 tspn cinnamon
1/2 tspn ground ginger
1/8 tspn salt
2 tbsn frozen orange juice
2 tbsn vegetable oil
1 tbsn fresh lemon juice
1 medium egg, beaten
Line muffin tin with liners. Preheat oven to 350 degrees.
In a large bowl, combine bran with milk and squash. Let sit for 5 minutes, make sure bran is completely absorbed.
In medium bowl, mix dry ingredients, in small bowl whisk orange juice, oil, lemon juice and egg. Add wet ingredients to bran. Do not over mix.
Put mixture in muffin cups and bake for approx. 18 minutes.
