Sweet Potato Custard

1 cup cooked, mashed sweet potato

1/2 cup mashed banana

1 cup evaporated milk

2 tbsn brown sugar

2 egg yolks beaten

1/2 tspn salt

1/4 cup raisins

1 tbsn sugar

1 tspn ground cinnamon


  1. Preheat oven to 325 degrees.

  2. In a bowl, stir together potato and banana.

  3. Add milk, blend well. Add brown sugar, egg yolk and salt.

  4. Spread a thin coat of butter in a 1 quart casserole dish, spray with non-stick spray.

  5. Combine raisins, sugar and cinnamon, sprinkle over top of potato mixture.

  6. Bake 40-45 minutes, insert knife and it should come out clean.
